Here is my favorite hash recipe
Ingredients:
1 package Italian chicken sausage with kale ( or your choice)
A mix of bell peppers
A mix of white potatoes and sweet potatoes 🍠 1 each
1 medium sweet onion
1 teaspoon basil dry or fresh
10-12 grape tomatoes
1 bunch of spinach
3 tablespoons of olive oil
1 garlic clove cut to your liking
Sprinkle of parsley
Salt and pepper to taste
I like to parboil my potatoes first so that they won’t have to cook so long in the pan and end up overcooked. Bring the water to a boil. Remove from the heat as soon as they are tender, drain, and set aside. Once you have done your prep work, add three tablespoons of olive oil to sauté onions and peppers in a large skillet. When they start to soften, add garlic. Cook another minute, then add drained potatoes and cooked meat choice add seasoning to your liking. Stir and cook for 2-3 minutes. Add spinach, season as needed with salt and pepper, and cook until spinach has wilted, then add tomatoes stir, cook until tomatoes are heated, sprinkle with parsley, serve, and enjoy!
You can serve your Hash as it is or top it with one or more of the following:
- Eggs (fried (or poached))
- Cheese (shredded (or crumbled))
- Scallions (sliced)
- Parsley (chopped)
- Hot sauce (or salsa)
