Easy Cheesy Chicken Enchiladas

**It’s a J.A.M!!**

My son Joshua likes most dishes, but when he approves a meal, he calls it a J.A.M. – a Joshua Approved Meal! One day, I made a meal that he loved, and he exclaimed, “This is a J.A.M.!” Ever since then, when he says it’s a J.A.M., I know it’s a delicious meal. Knowing that my cooking has passed the ultimate test – the J.A.M. approval is always a relief.


How to Make Easy and Cheesy Chicken Enchiladas

If you want a simple and satisfying meal that the whole family will love, you can’t go wrong with chicken enchiladas. These cheesy and creamy enchiladas are filled with tender chicken, cream cheese, salsa, and shredded cheese and baked in a delicious enchilada sauce. They are perfect for busy weeknights or cozy weekends, and you can easily customize them with your favorite toppings and sides.

Ingredients

To make these easy chicken enchiladas, you will need the following ingredients:

  • 3 cups cooked shredded chicken (you can use rotisserie chicken or cook your own)
  • 8 ounces of cream cheese, softened
  • 24oz jar salsa (I used medium chunky salsa)
  • 2 cups shredded cheese 
  • 10 (8-inch) flour tortilla
  • Optional toppings: sour cream, cilantro, green onions, black olives, avocado

Directions

  1. Preheat oven to 375°F and spray a 9×13 inch baking dish with cooking spray.
  2. In a saucepan, stir together the cream cheese and salsa until the cheese has melted. Add chicken and stir.
  3. Spoon about 1/4 cup of the chicken mixture and 2 tbsps shredded cheese onto each tortilla and roll up tightly. Place seam side down in the prepared baking dish. Repeat with the remaining tortillas and filling.
  4. Spoon enchilada sauce evenly over the enchiladas, Sprinkle the remaining cheese on top.
  5. Bake for 15-20 minutes or until the cheese is melted and bubbly.
  6. Serve hot with your desired toppings, and enjoy!

Tips and Variations

  • You can make these enchiladas and refrigerate them until ready to bake. Add 5 minutes to the baking time if they are cold.
  • You can also freeze these enchiladas for up to 3 months. Wrap them tightly in foil or plastic wrap and store them in a freezer bag. Thaw overnight in the refrigerator before baking as directed.
  • This recipe can use any salsa, but I recommend chunky salsa for more texture and flavor.
